Plate Of The Day : Open Faced chicken Salad

Super Easy light dinner

2 chopped chicken breast
1/4 c. Finely chopped celery
1/4 c. Finely chopped onion
1/8 c. Finely chopped pickled jalapeƱo
1/8 c. Finely chopped Dill pickle

Mix with

1/4 c. Plain yogurt
1 Tbs mayo or miracle whip
2 tsp mustard
1 Tbs hot sauce
Season to taste.

Spoon onto toasted bread of your choice with shredded cabbage. I used OroWheat sandwhich thins. Top with sliced tomato

Serve with fresh veggie sticks & hummus
