1 pint of strawberries
1/2 lemon juice and zest
3/4 c. Sugar
1 1/2 c Greek yogurt
1 cup kefir
Slice berries into a small pan, add sugar, lemon juice & zest
Cook over low heat until berries are cooked and liquid thickens.
Purée berry mixture in blender. Place in shallow container & put into freezer to cool down
Mix yogurt and kefir together. When berry mixture is cooled fold into the yogurt mixture.
Mix in an ice cream machine for 20 minutes
You can eat as is ( soft serve consistency ) or put into plastic container with a lid & freeze until scoopable.
